The entrance to the temple is marked by two massive stone lions that were believed to have been sculpted during colonial times, giving the temple its name – Lion Rock Cave Temple. Antigua and Barbuda is known for its delicious cuisine, and I was lucky enough to experience it firsthand during my visit. From the moment I arrived, it was clear that food was a major part of the culture here. Everywhere I went, there were little shops selling local foods like fried plantains and spicy jerk chicken.

One of my favorite dishes from Antigua and Barbuda is called fungi – a thick cornmeal porridge served with saltfish or vegetables. It’s surprisingly simple yet incredibly flavorful! The texture is firm but creamy, with hints of nutmeg and cinnamon in every bite. F
