United Arab Emirates is a magical place. I had the opportunity to visit this beautiful country and experience its culture, history, and of course food.

One dish that stands out in my mind is called maqluba – a savory rice-based casserole made with vegetables like eggplant, cauliflower or potatoes. It’s served upside down so when it’s brought to the table you can see all the different layers of color – it looks almost like art!
