My first stop on my culinary journey was mazondo. This is a thick porridge made from ground maize and peanuts that has been boiled for hours until it reaches an almost dough-like consistency. The amazing thing about this dish is that it’s served with just about anything – from spicy beef stew to sweet caramelized apples. When I tried it, the taste was like nothing else I’d ever had before – nutty and savory at once
