Samoa is a beautiful country with an amazing food culture that I was lucky enough to experience on my visit. One of the first dishes I tried was palusami, which is made from coconut cream and taro leaves wrapped in aluminum foil and then cooked over hot coals. It had a creamy texture and tasted like sweet coconut mixed with the earthy flavor of taro leaves. It was really delicious!

I also got to try oka, which is a type of raw fish dish served with onions, tomatoes, lemon juice, and other seasonings. The fish was so fresh it practically melted
